Crispy Cheesy Corn Ribs with Seasoned Garlic Butter
These cheesy corn ribs are brushed with garlicky herb butter, then baked or air-fried until golden and crisp around the edges. They’re a fun and easy side for summer barbecues – and usually one of the first things to disappear.

Corn ribs are one of those sides that always get a reaction when you bring them to the table. They look like you’ve done something rather impressive, but they’re actually very easy to make – and the tray is usually empty within minutes.
I started making these when I wanted a change from regular corn on the cob or another corn salad. The corn curls as it cooks, the edges get a little crisp, and then it’s all brushed with garlicky butter and covered in cheese. Needless to say, they’ve been on repeat around here ever since.
They’re perfect with just about anything coming off the grill – especially cervelas – and work so well with other easy summer sides like my Creamy Dill Potato Salad or Herby Cucumber Salad. Just be prepared for everyone to start picking at them before you’ve actually served supper.

What you’ll love about these Cheesy Corn Ribs
- Crisp edges, juicy corn: The kernels stay tender while the edges become golden and slightly caramelized.
- Oven or air fryer friendly: You can make them either way, so no special equipment is required.
- Simple ingredients, plenty of flavour: Garlic butter, herbs and cheese do most of the work.
- Easy to customize: Change the seasoning, herbs or cheese to suit the rest of your meal.
- Worth the cutting: Quartering the corn is the trickiest part, but once that’s done, the recipe is very straightforward.
Ingredient Spotlight
You’ll find the concise list of ingredients and their measurements in the recipe card below
Fresh Corn on the Cob
Firm, fresh corn is key here. It holds its shape when cut into ribs and curls beautifully as it cooks.
Butter
Melted butter coats the corn ribs and helps everything crisp and caramelize.
Garlic & Onion Powder
These give you that deep savory flavor without burning like fresh garlic can.
Smoked Paprika & Chili Flakes (Optional)
Smoked paprika adds warmth and depth. Chili flakes or chili powder are optional, but great if you like your cheesy corn ribs to have a little kick.
Fresh Herbs
Parsley, chives, or cilantro add freshness and balance the richness.
Cheese
Parmesan gives a salty, crisp finish. Cheddar melts into something softer and more indulgent – both work, just different vibes.

Equipment you’ll need for this recipe;
- Large, sharp chef’s knife
- Sturdy cutting board
- Large baking sheet
- Parchment paper
- Small microwave-safe bowl or saucepan
- Pastry brush
- Measuring spoons
- Cheese grater or Microplane
- Serving platter or large plate
Step-by-Step Instructions
How to make Cheesy Corn Ribs:

1. Preheat your oven or air fryer
- Oven: 425°F (220°C)
- Air fryer: 400°F (200°C)

2. Cut the corn into ribs
Stand each cob upright on a cutting board. Using a sharp knife (and a bit of confidence), carefully slice the cob in half lengthwise, then cut each half again to make quarters.
You’ll end up with long pieces that already look like they want to curl – that’s exactly what we’re going for.

3. Make the seasoned butter
In a small bowl, mix the melted butter with garlic powder, onion powder, smoked paprika, chili flakes, salt, pepper, and half of the chopped herbs.
This is where most of the flavor lives, so don’t be shy with seasoning.
4. Brush and cook
Arrange the corn ribs on a baking sheet or air fryer tray in a single layer. Brush generously with the seasoned butter.
- Oven: Bake for 12–15 minutes, flipping halfway, until the edges curl and the corn is lightly golden.
- Air fryer: Cook for 8–10 minutes, shaking or flipping halfway through.

5. Add the cheese
Sprinkle the corn ribs with Parmesan or cheddar and return them to the heat for 1–2 minutes, just until the cheese melts.
You want your cheesy corn ribs to be bubbly and irresistible, not burnt.
6. Garnish and serve
Finish the cheesy corn ribs with the remaining fresh herbs. Serve warm with lime wedges, sour cream, or a drizzle of hot honey if you’re feeling extra.

Variations & Substitutions
- Different cheeses:
Parmesan gives you crisp, salty edges. Cheddar melts into something softer and more indulgent. You can also try Gruyère, aged cheddar, or a mix of whatever you have on hand. - No butter?
Olive oil works just fine here. You’ll lose a bit of that buttery richness, but the corn ribs will still crisp nicely. - Spice level:
Skip the chili flakes if you’re cooking for kids, or bump them up if you like heat. Smoked paprika adds warmth to these cheesy corn ribs without spice, so it’s a good middle ground. - Fresh garlic option:
If you prefer fresh garlic, add it at the very end or mix it into the butter after cooking so it doesn’t burn. - Herb swaps:
Parsley, chives, or cilantro all work. I usually use what’s growing or what needs using up. - No air fryer or oven?
These cheesy corn ribs can also be grilled on the BBQ over medium heat in a grill basket – just make sure to keep an eye on them and flip once or twice.

Storage & Make-Ahead
Fridge:
Store any cheesy corn rib leftovers (if you have any) in an airtight container for up to 3 days.
Reheat (best methods):
- Air fryer: 375°F (190°C) for 4–5 minutes
- Oven: 400°F (200°C) for 8–10 minutes
Avoid the microwave – it softens the corn and kills the crisp edges.
Freezer:
Freezing these cheesy corn ribs is not recommended. Corn ribs lose their texture once frozen.

These cheesy corn ribs are always one of the first things to disappear from the table. Between the garlicky butter, crisp edges and plenty of cheese, they’re pretty hard to leave alone.
