When the weather heats up, I start craving meals that are light, refreshing, and honestly… require minimal effort. This watermelon salad with feta is my favorite kind of summer recipe: quick to throw together, wildly hydrating, and somehow both playful and really satisfying.

It also reminds me of hot summers spent in Switzerland, where dinners often felt lighter- fresh bread on the table, fruit everywhere, and a simple salad that made the whole meal feel like a little reset. This one has that same vibe: cool, colorful, and exactly what you want when the idea of turning on the stove feels like a personal attack.

The combo might sound a little wild at first – watermelon, strawberries, pineapple, cucumber, mint, and feta – but trust me, it works. The juicy fruit and crisp cucumber play so well together, and that salty feta is the perfect contrast. Add a bright honey-lime dressing and suddenly it tastes like summer in a bowl. If you’ve made my Watermelon Gazpacho, you already know I love fruit with a savory twist in the summertime. And just like my Herby Cucumber Salad or Celery Root Remoulade, this brings that crisp, chilled contrast that makes a side dish shine. It’s perfect for BBQs, sunny lunches, or those lazy days when you still want something fresh and satisfying – without doing the most.

  • This watermelon salad with feta strikes the perfect balance between sweet, salty, and refreshing.
  • Fresh and hydrating: Perfect for hot weather
  • Sweet-savory balance: Fruit, feta, and citrus all working together
  • Quick to make: No cooking required
  • Great for gatherings: Easy to scale up for BBQs or picnics
  • Light but satisfying: Never feels heavy or overly sweet
  • No feta: Try goat cheese or halloumi
  • Vegan: Skip the cheese or use a plant-based alternative
  • Extra crunch: Add toasted nuts or seeds
  • Different herbs: Basil works beautifully instead of mint

Watermelon: Juicy, refreshing, and the backbone of the salad

Strawberries & pineapple: Add brightness and natural sweetness

Cucumber: Keeps everything crisp and cooling

Mint: Essential for freshness – don’t skip it

Feta: Salty, creamy contrast that pulls the whole salad together

Honey & lime: A simple dressing that keeps things light and vibrant

How to make Watermelon Salad with Feta:

Watermelon salad with feta and mint being drizzled with honey.

1) Prep the fruit and veg

Start by cubing the watermelon into bite-sized pieces—big enough to stay juicy, small enough to scoop easily. Slice the strawberries, chop the pineapple into chunks, and slice the cucumber (I like half-moons for a nice mix of crunch and shape).

Tip: If your watermelon is extra juicy, you can let the cubes sit in a colander for 5 minutes while you prep everything else. Not mandatory, but it helps keep the salad from getting watery.

2) Combine the salad base

Add the watermelon, cucumber, strawberries, pineapple, and chopped mint to a large mixing bowl. Give it a gentle toss right away so the mint starts distributing through the fruit (mint likes to clump if it goes in last-minute).

3) Make the honey-lime dressing

In a small bowl or jar, whisk together the lime juice and honey until the honey fully dissolves. Then whisk in the olive oil until the dressing looks glossy and slightly emulsified.

Taste it: you’re looking for bright + lightly sweet. If your fruit is very sweet, add a tiny extra squeeze of lime. If it’s not quite ripe, a touch more honey helps.

4) Dress gently (so you don’t smash the fruit)

Drizzle the dressing over the salad and toss very gently—think “fold,” not “stir.” Watermelon can bruise if you go at it too aggressively, and strawberries can get mushy.

5) Season (yes, even fruit salad!)

Add a pinch of salt and a few cracks of black pepper. It sounds small, but it makes the flavors pop—especially with the feta.

6) Add the feta at the end

Sprinkle the crumbled feta over the top after tossing, then give one final gentle fold. This keeps the feta from disappearing into the dressing and turning the whole salad creamy.

7) Let it sit briefly, then serve

Let the salad sit for about 10 minutes before serving. This gives the mint and dressing time to settle into everything.

Serve it chilled, and if you want it extra pretty: a few mint leaves on top and a little extra feta makes it look instantly “gathering-ready.”

Yes, but it’s best enjoyed the same day. Fruit will release juices as it sits.

Use ripe but firm fruit and avoid overdressing. Letting watermelon drain briefly helps.

Absolutely – the salad is very forgiving and works with just watermelon and cucumber too.

Absolutely. Feta is classic here, but crumbled goat cheese, mozzarella pearls, or even a sprinkle of parmesan shavings can work beautifully.

Try mango, nectarines, blueberries, or even grapes. Just aim for a mix of juicy, sweet, and slightly tangy fruits.

Yes – just skip the feta or use a plant-based cheese alternative. You can also swap honey for maple syrup or agave in the dressing.

This watermelon salad with feta is everything I want from a summer dish – fresh, light, and effortless, with just enough contrast to keep things interesting. It’s the kind of recipe that quietly becomes a staple once the weather warms up.
