Apfelküchlein (Swiss Apple Fritters)

No ratings yet
These Swiss Apfelküchlein are made with tender apple slices dipped in a light batter and pan-fried until golden. They’re cozy, simple, and just as lovely for breakfast or brunch as they are for dessert.

Ingredients

For the batter
  • 1 cup all-purpose flour 120 g
  • 2 tablespoons granulated sugar 25 g
  • Pinch of salt
  • 1 large egg
  • 3/4 cup milk 180 ml
  • 1 teaspoon vanilla extract 5 ml
  • 1 tablespoon kirsch optional (15 ml)
For the apples
  • 2 to 3 apples peeled and cored (about 450 g)
  • For frying
  • Neutral oil as needed for shallow frying
For finishing
  • 2 tablespoons granulated sugar 25 g
  • 1/2 teaspoon cinnamon

Method

  1. Peel and core the apples, then slice them into rings about 1/4 inch thick.
  2. In a mixing bowl, whisk together the flour, sugar, salt, egg, milk, vanilla, and kirsch if using, until smooth.
  3. Heat a shallow layer of oil in a skillet over medium heat.
  4. Dip each apple ring into the batter, letting the excess drip off.
  5. Place the battered apple rings into the hot pan and cook for about 2 to 3 minutes per side, until golden.
  6. Transfer to a paper towel-lined plate.
  7. Mix the sugar and cinnamon together and sprinkle over the warm Apfelküchlein before serving.

Notes

  • Tart apples like Granny Smith or Braeburn work especially well here.
  • These are best served warm, when the outside is lightly crisp and the apples are still soft.
  • You can finish them with powdered sugar instead of cinnamon sugar, or serve with whipped cream or vanilla sauce.
