Apple crisp has been one of my go-to desserts for years – simple, cozy, and always a favorite when apples are in season. It’s the kind of dessert that feels just as right on a quiet weeknight as it does on a crowded fall table.

What sets this version apart is the topping. Browning the butter adds a deep, nutty richness, while a touch of orange zest lifts everything just enough to keep it from feeling heavy. It’s still familiar and comforting, but with a little extra something.

How to make Brown Butter Apple Crisp:

Prep the Apples

Preheat your oven to 175°C (350°F) and lightly grease a 9×9-inch (23×23 cm) baking dish.

In a large bowl, toss the sliced apples with lemon juice, sugar, flour, and spices until evenly coated. Spread the mixture into the prepared baking dish, making sure the apples are fairly level.

Brown the Butter

Place the butter in a light-colored saucepan over medium heat. Let it melt, then continue cooking, swirling occasionally, until it turns golden brown and smells nutty – about 3–5 minutes.

Watch closely during the final minute; browned butter goes from perfect to burnt quickly. Remove from the heat and immediately stir in the orange zest. Let it cool slightly for about 5 minutes.

Make the Crisp Topping

In a medium bowl, combine the oats, flour, brown sugar, salt, and spices. Pour in the warm brown butter and orange zest mixture, stirring until clumps form. Fold in the nuts, if using.

Assemble & Bake

Sprinkle the topping evenly over the apples.

Bake uncovered for 40–45 minutes, or until the topping is golden brown and the apple filling is bubbling around the edges. Let the brown butter apple crisp rest for 10–15 minutes before serving.

  • 6 medium apples about 900 g, peeled, cored, and sliced ¼-inch thick
  • 2 tbsp lemon juice
  • cup 65 g granulated sugar
  • 2 tbsp all-purpose flour
  • tsp Harvest Spice Blend
  • or use the spice mix below
  • 1 tsp ground cinnamon
  • ¼ tsp ground cardamom
  • ¼ tsp ground nutmeg
  • Pinch of allspice
  • Pinch of ground cloves
  • Tiny pinch of white pepper optional

  • 1 cup 100 g rolled oats
  • ½ cup 60 g all-purpose flour
  • ½ cup 100 g brown sugar, packed
  • ½ tsp fine sea salt
  • 1 tsp Harvest Spice Blend
  • or use the spice mix below
  • ¾ tsp ground cinnamon
  • Pinch of cardamom
  • Pinch of nutmeg
  • Pinch of allspice
  • Pinch of ground cloves
  • Tiny pinch of white pepper optional
  • ½ cup 113 g unsalted butter
  • Zest of 1 medium orange
  • Optional: ½ cup 60 g chopped pecans or walnuts

Method
 

  1. Preheat oven to 175°C (350°F). Lightly grease a 9×9-inch (23×23 cm) baking dish.
  2. In a large bowl, toss apples with lemon juice, sugar, flour, and spices. Spread evenly in the prepared dish.
  3. In a light-colored saucepan over medium heat, melt the butter. Continue cooking, swirling occasionally, until golden brown and nutty, about 3–5 minutes. Remove from heat and stir in orange zest. Let cool slightly.
