Easy Spiced Baked Apples with Nuts and Honey
Think of these as individual apple pies, minus the effort of rolling out a pastry crust. Stuffed with a golden, honey-sweetened oat and nut crumble, they make the entire house smell incredible – whether you’re baking them for a cozy weekend brunch or an easy weeknight dessert.

Searching for something specific?
There is a specific moment in late autumn when the kitchen transitions from fresh, raw fruit to anything that can be roasted, spiced, and served warm. If you’ve made my Apple-Hazelnut Galette, you know I love showcasing apples at their peak. But on a busy weeknight when I want the house to smell like cinnamon and toasted nuts without rolling out a pastry crust, I make these. They borrow the hearty, rustic texture of a morning Bircher muesli but bake down into a caramelized dessert that tastes incredible with a scoop of vanilla ice cream melting into the center.

My Notes on the Ingredients for Baked Apples
When I was testing this recipe, I found that Honeycrisp and Granny Smith hold their structure perfectly without collapsing into mush. If you want a bit of visual and flavor contrast in the pan, use a mix of both. For the crunch, I love a blend of almonds, pecans, and hazelnuts – but if you have a bag of walnuts on hand, use those instead.

Step-by-Step Instructions

How to make the perfect Baked Apples:
Preparation:
- Preheat your oven to 350°F (175°C).
- Core the apples and scoop out some of the flesh to create a “bowl”, leaving the bottom and sides intact to hold the filling.
- Small dice 1/3 cup of the cored flesh

Make the Filling
- In a small bowl, mix the chopped dates, nuts, oats, apple, honey, cinnamon, ginger, cardamom, and cloves.
- Stuff each apple with the spiced filling, pressing it in gently.

Assemble & Bake
- Place the filled apples in a baking dish, dot each one with a small piece of butter, and pour the apple juice or water into the dish.
- Cover the baking dish with aluminum foil.
- Bake for 30-40 minutes, or until the apples are tender but still hold their shape (removing the foil halfway through cooking).
- Serve the spiced baked apples warm, with a scoop of vanilla ice cream.

Notes from My Kitchen
Before you grab your coring knife, here are a few practical, real-world notes from my kitchen testing to ensure your baked apples turn out flawlessly crisp, structurally sound, and utterly delicious.
The Next-Day Breakfast Truth: While these are absolutely stunning served hot right out of the oven with a scoop of vanilla ice cream, do yourself a favor and make a double batch. Leftover baked apples keep beautifully in the fridge. The next morning, eat them cold or gently warmed over a thick bowl of plain Greek yogurt. The spiced oat filling softens just enough to taste exactly like a gourmet apple-pie-inspired breakfast.
The No-Cut Coring Trick: The secret to a perfect baked apple is creating a sturdy “bowl” for your filling without accidentally cutting straight through the bottom. I find it easiest to slice the apples in half vertically first. Then, instead of a sharp knife, use a melon baller or a sturdy metal teaspoon to gently scoop out the core and seeds. This gives you a clean, round cavity while keeping the bottom completely intact so none of those sweet juices escape.
Preventing the Spillover Factor: When you are piling that glorious oat and nut mixture into the apple halves, don’t be afraid to use a little muscle. Use your fingers or the back of your spoon to pack the filling tightly into the cavities, mounding it slightly on top. When that little square of butter melts down in the oven, a loose filling will simply wash away and spill all over your baking dish. Packing it tight ensures the crumble bakes directly into the softening fruit.
