  • 1 tsp baking soda 5 g
  • ½ tsp ground cinnamon 1.5 g
  • ¼ tsp salt 1.5 g
  • 1 cup sour cream 240 g
Cranberry Pecan Topping
  • cup brown sugar packed (130 g)
  • cup unsalted butter 75 g
  • ¼ tsp ground cinnamon 0.75 g
  • cups cranberries fresh or frozen (125 g)
  • ½ cup chopped pecans 60 g

Method
 

Make the Topping
  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, combine the brown sugar, butter, and cinnamon.
  3. Bring to a gentle boil over medium heat, stirring until smooth.
  4. Remove from heat and stir in the cranberries and chopped pecans.
  5. Pour the mixture into a well-greased 8–9 inch springform pan, spreading it evenly across the bottom.

  1. In a mixing bowl, cream the butter and granulated sugar until light and fluffy.
  2. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  4. Add the dry ingredients to the butter mixture, alternating with the sour cream, beginning and ending with the dry ingredients. Mix until smooth.
  5. Spoon the batter evenly over the cranberry pecan mixture and gently smooth the top.
Bake and Invert
  1. Place the springform pan on a baking sheet and bake for 60 minutes, or until a toothpick inserted in the center comes out clean.
