If you’ve tried my Cranberry Orange Loaf or Lemon Pistachio Bundt Cake, you already know I have a soft spot for bakes that balance sweetness with a little tartness and texture. This Cranberry Pecan Upside Down Cake fits right in – cozy, comforting, and quietly impressive.
This is one of those recipes that’s been part of my kitchen for years. I’ve been baking some version of this cake for over 20 years, adjusting it slightly over time until it became the one I always come back to. It’s been made for holidays, brunches, and countless casual gatherings, and it never fails to surprise people once it’s inverted and sliced.
The contrast is what makes it special. Tart cranberries soften and mellow as they bake into a buttery brown sugar topping, while pecans add warmth and crunch. Underneath it all is a tender, cinnamon-scented sour cream cake that ties everything together without overpowering the fruit. It’s rich, but balanced – the same kind of harmony I love in my Black Forest Cake, where fruit and richness meet without tipping into heaviness.
I love how versatile this cranberry pecan upside down cake is. It works beautifully as a brunch centerpiece, feels right at home on a holiday dessert table, and is just as comforting served slightly warm with a cup of coffee on a quiet afternoon. Most of all, it fills the kitchen with that unmistakable holiday hug aroma – the kind that makes people wander in asking what’s in the oven.

Step-by-Step Instructions
How to make my Cranberry Pecan Upside Down Cake:
Start by preheating your oven to 350°F (175°C). Place a baking sheet on the rack below where the cake will bake – this just catches any butter drips and saves you cleanup later.

Make the Topping
In a saucepan, combine the brown sugar, butter, and cinnamon. Bring it just to a boil over medium heat, stirring until smooth. Once everything is melted and bubbling, remove it from the heat and stir in the cranberries and chopped pecans.
Pour this mixture into a well-greased 8–9 inch springform pan and gently press it into an even layer. Don’t worry about perfection – it will settle as it bakes.

Make the Cake Batter
In a bowl, cream the butter and sugar until light and fluffy. This step matters – it helps keep the cake tender.
Add the eggs one at a time, mixing well after each, then stir in the vanilla.
In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Add this to the butter mixture, alternating with the sour cream. Start and end with the dry ingredients, mixing just until smooth.
Spoon the batter gently over the cranberry mixture and smooth the top.

Bake
Place the springform pan on a baking sheet and bake for about 1 hour, or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 10 minutes – this timing is important. Too soon and it may fall apart; too long and the topping can stick.
Invert your Cranberry Pecan Upside Down Cake carefully onto a serving plate, release the pan, and let the topping settle naturally.
