How to make Easter Bunny Cookies:
Cream the butter and sugar
In a large bowl, beat the softened butter and sugar together until light and creamy. This should take about 2–3 minutes. Don’t rush this – it sets up the texture.
Add vanilla
Mix in the vanilla extract.
Add dry ingredients
Add the flour and salt. Mix just until combined. The dough will look soft but not sticky.
Chill the dough
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. This helps the cookies keep their bunny shape.
Roll and cut
Roll the dough to about ¼-inch (6 mm) thickness on a lightly floured surface. Cut out bunny shapes. For half of them, cut a small window in the center.
Fill with jam
