Ingredients Explained
Puff pastry – store-bought works beautifully; look for all-butter pastry if possible.
Parmesan – adds salty umami that balances the herbs.
Seasoning blend – Italian Seasoning Blend gives depth, but basil, dill, or herbes de Provence also shine.
Butter + garlic – helps everything stick and gives those golden, crisp edges.
Egg wash – your key to a glossy bakery-level finish.

Step-by-Step Instructions
How to make Herby Puff Pastry Bites:

1. Prepare the puff pastry
Preheat your oven to 375°F (190°C).
Roll out the puff pastry on a lightly floured surface into a rectangle (about 12×10 inches). Don’t worry if the edges aren’t perfect – rustic always tastes just as good.
2. Make the garlic butter
In a small bowl, stir together the melted butter and the garlic (freshly minced or garlic powder both work beautifully). Brush this all over your puff pastry so every bite gets a little garlicky love.

3. Layer the flavors
Sprinkle a generous layer of Parmesan over the pastry.
Then comes the fun part – your seasoning. I reach for my Sweet Italian Sausage Seasoning from Selefina Spices because the mix of herbs, salt, and gentle heat is magic. If you’re like me and enjoy a little kick, add a pinch of red pepper flakes too.
4. Roll and chill
Starting from the long edge, roll the pastry into a tight log. Pop it into the fridge for 10–15 minutes to firm up – this makes slicing a breeze. (If you’re in a rush, you can skip chilling and simply go with the natural spiral shape.)

5. Shape the bites
Slice the log into 1-inch rounds and place them on a parchment-lined baking sheet.
Sometimes I like to give them a little upgrade: lay a round flat, then press a chopstick gently into the center. The two ends lift up and create the sweetest little butterfly shape – tiny effort, big visual payoff.
6. Brush with egg wash
Whisk the egg with 1 tablespoon of water, then lightly brush each pastry bite. This is what gives them that beautiful golden, bakery-style sheen.

7. Bake
Bake for 18–22 minutes, or until the pastries are puffed and golden brown. If your kitchen smells irresistible… that’s how you know they’re close.
8. Garnish and serve
Let them cool for just a couple of minutes, then finish with a sprinkle of fresh parsley and a dusting of Parmesan if you’re feeling fancy. Serve these Herby Puff Pastry Bites warm – they’re at their best when they’re still slightly flaky and buttery.

Herby Puff Pastry Bites
Ingredients
Method
- Preheat your oven to 375°F (190°C). Roll out the puff pastry on a lightly floured surface into a rectangle about 12×10 inches.
- Stir together the melted butter and garlic. Brush this evenly over the puff pastry.
- Sprinkle Parmesan evenly over the buttered surface, then add your seasoning blend. Add red pepper flakes for heat if you like.
- Roll the pastry tightly from the long edge into a log. Chill for 10–15 minutes to make slicing easier.
- Cut the log into 1-inch rounds and place them on a parchment-lined baking sheet.
- Optional: Press a chopstick gently into the center of each slice to create a cute “butterfly” shape.
- Whisk the egg with 1 tbsp water and lightly brush the tops.
- Bake for 18–22 minutes until golden, puffed, and crisp.
- Let cool slightly, then sprinkle with fresh parsley and a little extra Parmesan. Serve warm.
Notes
- Keep the pastry cold: Cold puff pastry puffs higher and slices more cleanly. If it gets warm while you’re working, pop it back into the fridge for a few minutes.
- Chilling helps the shape: A quick 10–15 minute chill makes the spirals or “butterfly” folds hold their shape better in the oven.
- Fresh vs. powdered garlic: Fresh garlic gives a bolder flavor; garlic powder blends more evenly. Use whichever matches your vibe.
- Cheese options: Parmesan is classic, but Gruyère, Asiago, pecorino, or even aged cheddar work beautifully here.
- Seasoning flexibility: Use any herby blend you love. Italian seasoning, za’atar, ranch, Cajun spices, or lemon pepper all change the personality of these bites.
- Baking from frozen: You can freeze the sliced rounds and bake straight from frozen – add 2–3 minutes to the bake time.
- Reheating: Re-crisp in a 350°F (175°C) oven for 5–7 minutes.
- Serving ideas: Perfect for apero platters, holiday gatherings, soup nights, or cozy movie snacks.

Serving Ideas
Serve your Herby Puff Pastry Bites;
- With a cozy soup (Potato Leek, Spiced Pumpkin, or Creamy Cauliflower).
- On a charcuterie board next to cured meats + cheeses.
- As a pre-dinner aperitif snack with wine.
- With dips: marinara, whipped feta, pesto, or herb yogurt sauce.
- As a brunch side – honestly, everything tastes better with puff pastry.
Make Them Perfect
- Keep pastry cold → the colder the pastry, the better the puff.
- Use all-butter puff pastry if possible – flavour and flakiness are unmatched.
- Don’t skip the egg wash – it’s the difference between “homemade” and “bakery window.”
- Twist loosely → too tight, and they won’t puff properly.
- Bake on parchment → caramelized cheese = easy cleanup.
Storage & Make-Ahead
- Fridge: 3 days, reheat at 350°F for 5–7 minutes.
- Freezer (baked): freeze on a tray, then store up to 2 months.
- Freezer (unbaked): freeze the twists raw; bake from frozen +2 minutes.
- Best texture: always served warm.
