Step-by-Step Instructions
How to make Pumpkin Spice Babka:

Start the dough
In a big mixing bowl, whisk together the flour, sugar, yeast, and salt. Add your warm milk and eggs and mix until it looks like a shaggy, messy dough – totally normal.
2. Add the butter
Now comes the magic step: kneading in soft butter bit by bit. It feels like it won’t come together at first, and then suddenly it becomes smooth, stretchy, and beautiful. Knead until the dough is soft and elastic.
Cover the bowl and let it rise until doubled – about 1½ hours. I always peek at it like a kid watching a cake bake.

3. Mix the filling
Stir together pumpkin, brown sugar, spices, and melted butter. Smells like fall in a bowl. Fold in chocolate chips or nuts if you want the extra texture.
4. Shape the babka
Roll the dough into a big rectangle. Spread the filling from edge to edge, then roll it up into a log. Slice it lengthwise to expose all the layers – the part I always look forward to – and twist the two strands together. Transfer into a loaf pan.

5. Second rise
Let the shaped babka puff up for about 45–60 minutes. It should look cozy and full.
6. Bake
Brush with egg wash, bake until golden, then brush immediately with syrup so it stays soft and glossy.

Ingredients
Method
- In a large bowl, combine flour, sugar, yeast, and salt.
- Add warm milk and eggs; mix until a rough dough forms.
- Knead in the softened butter, one tablespoon at a time, until smooth and elastic (about 10 minutes by hand or 5–7 minutes with a dough hook).
- Transfer to a greased bowl, cover, and let rise in a warm spot for about 1½ hours, or until doubled.
- In a bowl, mix pumpkin purée, brown sugar, spices, and melted butter until smooth.
- Fold in chocolate chips or nuts, if using.
- Roll the dough into a 16×12-inch (40×30 cm) rectangle.
- Spread filling evenly, leaving a 1-inch border.
- Roll into a log from the long side.
- Slice the log lengthwise and twist the halves together, cut sides up.
- Transfer to a greased 9×5-inch loaf pan.
- Cover and let rise for 45–60 minutes.
- Preheat oven to 350°F (175°C).
- Brush with egg wash.
- Bake for 35–40 minutes, until deeply golden.
- While baking, heat sugar and water until dissolved.
- Brush hot babka with syrup immediately after baking.
- Cool 10 minutes in the pan, then transfer to a rack.
