Vegetable Soup with Pasta (Swiss Minestrone-Style, Hearty & Easy)

-

This hearty vegetable soup with pasta is inspired by Swiss-style minestrone – packed with vegetables, beans, and cozy flavor for colder days.

There’s a quieter side of Swiss cooking that often gets overlooked – one that leans into sun-ripened vegetables, olive oil, and slow-simmered soups. In the southern canton of Ticino, where Switzerland brushes up against Italy, dishes like this vegetable soup with pasta feel right at home.

This version is simple, hearty, and deeply comforting – filled with seasonal vegetables, beans, and herbs, all simmered into something that feels both rustic and refined. It’s the kind of soup you’d find after a long walk through a hillside village, served warm with a piece of crusty bread and a generous shaving of cheese.

Its spirit feels deeply familiar if you love soups like Gerstensuppe (Swiss barley soup), a Leek and Potato Soup with Sausage, or even a light pancake noodle Flädlisuppe, where simple ingredients are layered thoughtfully and simmered into something deeply comforting.

How to make Swiss Vegetable Soup with Pasta:

Celery being small diced on a wooden cutting board with zucchini and green beans next to it.

1) Prep and measure everything first

Before you turn on the stove, do a quick prep session – it makes cooking feel smooth instead of chaotic.

  • Dice the onion (small-ish pieces so it melts into the soup).
  • Slice the carrots and chop the celery into bite-size pieces.
  • Mince the garlic.
  • Dice the zucchini and chop the green beans into small pieces.
  • Drain and rinse both cans of beans.
  • Chop the spinach or kale and set it aside for the end.

Tip: Aim for similar-sized pieces so everything cooks evenly.

2) Start the base (this is where the flavor begins)

Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Cook for about 6–8 minutes, stirring occasionally, until the onion looks soft and the vegetables start to smell sweet and savory.

3) Add the garlic

Stir in the minced garlic and cook for 30–60 seconds, just until fragrant. (If garlic starts browning, lower the heat – we want mellow flavor, not bitterness.)

4) Add the “body” ingredients

Add the diced tomatoes, kidney beans, cannellini beans, zucchini, and green beans. Stir to combine so everything gets coated in that flavorful base.

5) Season and simmer

Pour in the vegetable broth. Add the oregano, basil, thyme, rosemary, plus a good pinch of salt and pepper. Bring the pot to a gentle boil, then reduce to a simmer and cook for about 20 minutes, until the vegetables are tender but not falling apart.

While the soup simmers, cook the pasta in salted water according to package directions. Drain and set aside.
This keeps the pasta from soaking up all your broth – especially important if you plan on leftovers.

7) Finish the soup

Stir the cooked pasta into the pot, then add the chopped spinach or kale. Simmer for another 3–5 minutes, just until the greens wilt.

8) Taste and adjust

Taste the broth and adjust:

  • more salt if it tastes flat
  • more pepper for warmth
  • a spoonful of pesto or Parmesan at the end for extra depth

9) Serve

Ladle into bowls and finish with grated Parmesan (or a spoonful of pesto). Serve with crusty bread if you want the full cozy experience.

Vegetable soup with pasta is a hearty, broth-based soup made with seasonal vegetables, beans, and small pasta. It’s very similar to minestrone, but the name “vegetable soup with pasta” is often used more broadly to describe flexible, home-style versions like this one.

Very close. Minestrone is the traditional Italian version, while this vegetable soup with pasta takes a slightly more flexible, Swiss-inspired approach. It uses the same idea – vegetables, beans, and pasta simmered together – but allows for simple substitutions based on what you have on hand.

Small pasta shapes work best so they blend easily into the soup. Ditalini, small shells, elbow macaroni, or even broken spaghetti are all great options. They cook quickly and hold their texture without overwhelming the vegetables.

The easiest way is to cook the pasta separately and add it just before serving. If you cook it directly in the soup, keep it slightly undercooked and store leftovers with extra broth.

Yes, and it often tastes even better the next day. For best texture, you can cook the pasta separately and add it when serving, as it will continue to absorb the broth as the soup sits.

You can, but keep in mind that the pasta may soften after freezing and reheating. If you’re planning to freeze it, it’s best to leave the pasta out and add freshly cooked pasta when serving.

Absolutely! Use about 2 cups of fresh diced tomatoes. You might need to add a bit more broth to achieve the desired consistency.

While it may not always be called minestrone, soups like this are very common in southern Switzerland, especially in Ticino. The cooking reflects both Swiss and Italian influences, with simple ingredients simmered into hearty, comforting meals.

Yes! Sauté the vegetables and garlic first, then transfer everything except the pasta and greens to the slow cooker. Cook on low for 6-8 hours or high for 3-4 hours, adding the pasta and greens in the last 30 minutes.

This classic vegetable minestrone soup is one of those recipes that earns its place on repeat – comforting, adaptable, and deeply satisfying. Whether you make it exactly as written or tweak it with what’s in your fridge, it’s the kind of soup that shows how simple ingredients can become something truly nourishing.
